Shrimp Po’ Boy

8, 31-40 cooked shrimp (cocktail size)

2 slices tomato

1/4 shredded lettuce

2 tablespoons red remoulade (recipe below)

Red Remoulade:

Mix together all these ingredients (makes 2 cups)

  • 2 cups mayonnaise
  • 2 tablespoons ketchup
  • 2 tablespoons whole grain mustard
  • 1 teaspoon cayenne pepper
  • 1 tablespoon lemon juice
  • 2 teaspoons horseradish
  • 1 tablespoon minced garlic
  • 1 teaspoon celery seed
  • 1.5 teaspoons smoked paprika

For the Po’ Boy:

  • Pull off tails from the shrimp and mix in a bowl, two tablespoons of remoulade
  • Cut the muffin and assemble sandwich with shredded lettuce, tomato, and shrimp
  • Serve with chips
