Spring Chicken Sandwich


1 Stone & Skillet English Muffin

Green Goddess Dressing (recipe below)

4 oz skinless/boneless chicken breast

1 cup Panko bread crumbs

1/4 cup basil pesto

1/4 flour

1 egg

2 strips bacon

1 Boston bibb lettuce leaf

1 slice cheddar cheese


  • Preheat oven to 350F
  • Fry bacon and set aside
  • Place panko crumbs in a small cookie sheet or pie dish and place in oven for 10-15 minutes, until they are golden brown
  • Mix pesto into bread crumbs thoroughly
  • Place flour and whisked egg in separate bowls
  • Coat chicken in flour, then in egg, then in panko mixture
  • Put chicken on baking sheet and into the oven for 15-20 minutes
  • While chicken is cooking, make Green Goddess Dressing by mixing in a blender:
    • 3/4 mayonnaise
    • 3/4 sour cream
    • 1 minced clove of garlic
    • 2 T lemon juice
    • 3 T chopped chives
    • 1/4 cup tarragon
    • 1/2 cup parsley
  • After 10 minutes of chicken cooking, slice english muffin and place cheese on bottom half and place in oven on baking sheet until melted
  • To assemble, place lettuce and bacon on the bottom muffin. Top with chicken and Green Goddess Dressing.
