Toad In The Hole Breakfast Sandwich

1 Stone & Skillet English Muffin

1 Egg

Canola oil

3 slices of bacon

3 slices tomato

Bibb lettuce

1 slice Jack Cheese

1/2 tablespoon mayo

 

  • Slice tomato, set aside
  • Fry bacon in pan until done, set aside
  • Preheat nonstick skillet over med-low heat
  • Split english muffin and cut a hole in the top part of the muffin
  • Place one slice of cheese on bottom muffin and place in oven until cheese has melted
  • Put top muffin in skillet and drizzle 1/4 of canola oil in the hole
  • Crack egg into hole (be careful not to break yolk)
  • Wait until some of the egg white has set, (about 3 minutes), and cover until egg white is completely cooked through and egg yolk is still runny (an additional 3-4 minutes)
  • Spread the bottom muffin with mayo and top with lettuce, tomato, bacon and top muffin
  • Season egg with salt and pepper
